Freshwater Crabs
Abundant during the rainy season, both rice field and mangrove crabs flood local markets, and are sold live, dead, spiced, pickled, as a paste, or grilled. There's not much meat in them, but the locals love 'em, nevertheless--particularly when downed with loads of chilli and garlic!
